Quick "No Prep" Black Bean Soup

I love how this recipe doesn't require chopping onions or celery or carrots that most soup recipes suggest as soup starters. Instead look in your pantry for canned tomato products like salsa, crushed tomatoes, or fire roasted tomatoes. These ingredients are all you really need to make a delicious and healthy black bean soup without needing to spend time on the usual vegetable chopping to prepare a soup. If you don’t have salsa and are using the canned crushed tomatoes then add ¼ teaspoon of garlic powder, onion powder and a splash of apple cider vinegar to add some of the flavors you would find in a salsa.

Ingredients:
1 (15 oz) can black beans, or 1 1/2 cups cooked from dry beans
1 cup canned salsa or crushed tomatoes or fire roasted tomatoes
1/2 cup water
3/4 tsp ground cumin
Additional spices: ¼ tsp garlic and onion powder each
Optional frozen vegetables to add: broccoli, asparagus, cauliflower, spinach, mushrooms, artichokes, or corn.

Directions:
1. Combine all ingredients in a pot on the stove and warm up to preferred temperature.
2. Keep it simple or feel free to add any frozen vegetables you may have on hand to make the soup more filling and nutritious.

Enjoy!
